Veg Cutlet



 

Veg cutlet is a very popular tea time snack.  The ingredients are always readily available and it does not take long to prepare this.  These are extremely easy to make and one of the best ways to get kids eat vegetables. 
Cutlets were almost never prepared at home back in my childhood days. The reason being my uncle owned “Kamath Cold Drinks” in Udupi and we just got it from there. Those were the best cutlets ever. Not just because it was my uncles restaurant. It was really lip smacking delicious. 

 
It’s been a few years since I had them.  I just realized a few days back to try making them myself. I asked my mom the recipe and she just mentioned few of the ingredients. I added a few of the ingredients to suit my taste.


Ingredients
Potato -1
Beetroot -1
Carrot -1
Green chillies – 3 to 4 ( as per taste)
Corinder leaves – a handful
Salt
Turmeric – 1 tsp
Garam masala – 2 tsp
Cornflour
Breadcrumbs/Semolina
For tempering
Onion -  1 medium
Curry leaves – 5 to 6
Mustard seeds  1 ½ tsp
Urad dal – ½ tsp

  Method
1.       Boil potato,carrot and beetroot
2.       Peel the skin and mash them.
3.       To this add ,coriander leaves,turmeric powder and garam masala.
4.       Now heat oil in kadai. Add mustard seeds. After it splutters ,add urad dal and curry leaves
5.       Saute for a minute. Add onion and sauté till transparent.
6.       Add this to the mashed veggies. Add salt and mix well
7.       Now take a  small portion of this mixture and shape it as you wish.
8.       Coat it in cornflour and then breadcrumbs/semolina.
9.       Shallow fry



Serve hot with coriander chutney and sauce.
Note: Other vegetables can also be added.

  2. I can never forget the taste of these cutlets!!! When i was in school i remember eating these cutlets everytime in ur uncle's restaurant.. It was awesome.. Oh.. My mouth is already watering.. Yummy..
