Chicken Curry on a Sunday is a
must in my family. So I am always on the
lookout for new recipes to try out as it is always exciting to cook something for
the first time. The goal is to find a recipe that is simple with easy to find
ingredients and takes very less time to cook. I don’t want to spend my entire day
in the kitchen. I got this recipe from
my aunt (who I turn to most of the time for new dishes).
Chicken Masala is the name I have used for the blog post. The reason being most of the chicken dishes don’t have a name and are by default always called “chickena randhayi” (which means Chicken Curry in Konkani).
Ingredients
For Paste
Chicken – ½ kg
Onion – 1 big
Grated Coconut-
3 tbsp
Coriander
leaves – a handful
Ginger – 2 “
Garlic – 5
to 6 cloves
Cinnamon – ½
“
Peppercorns –
4
Green Chilli
– 2 to 3 (adjust as per taste)
For Curry
Curry leaves
– 5 to 6
Onion – 1 big
Tomatoes – 2
Coriander
Powder – 2 tsp
Chilly
Powder – 2 tsp (add more if you like spicy food)
Turmeric
Powder – 2 tsp
Salt to
taste
Method
1.
For the paste : Fry
the onion lightly. To this add grated coconut and sauté for a minute or so.

Transfer to a grinder and add all the other
ingredients under paste

Now heat oil in a kadai. Add curry leaves
,chopped onions. Saute till onion becomes translucent.
4.
Add tomatoes and fry some more. Add the ground
paste and sauté for a minute or two.

To this add all the powders .
6.
To this add chicken and let it cook .
7.
Add salt and adjust consistency of the gravy.
8.
Garnish with coriander leaves.
Serve hot with rice or roti.
