Diwali is just few days away and
I am sure everyone is busy making sweets and savories. I decided to make some
myself . To be honest I have never
really prepared Indian sweets. But with the new blog and Diwali, I felt I
should make more Indian sweets other than gajar ka halwa. Since it is my first time I wanted something
simple. Rava laddoo was the obvious
option and also suggested by my mom and aunt.
Rava laddoos are very easy to
make. The best part for this recipe or for that matter any Indian sweet is that
the ingredients are commonly available at home. With day to day ingredients you
can make these desserts in a jiffy.
These laddoos are the best option when you have very little time at
hand. It is perfect for festivals and
special occasions.
Ingredients
Rava - 1 cup
Ghee – 3 tbsp
Grated Coconut –4 tbsp
Sugar – ¾ cup
Cardamom – 1 tsp crushed
Cashwenuts and raisins - a handful
Milk (if needed)
Method
1. In a pan, heat ghee.
Add rava and lightly fry it on low flame for 5 to 6 minutes or till
rava changes color and you get a
pleasant aroma.

Once done, transfer the rava into a
bowl.

Into the same pan add grated coconut
and fry for 2 to 3 minutes.

Transfer this to the same bowl.

Add cardamom powder, Cashwenuts and
raisins.
6. In a vessel add sugar and water to make sugar syrup. To check if the syrup is ready, take a drop
between your thumb and index finger and put it apart. If strings are formed
then the syrup is done. Don’t make it too thick.

Add the syrup to the bowl and mix
well.

Now take small portions and make
them into lemon sized balls.
Rava laddoos are ready.
Note
If upon adding
sugar syrup the mixture hardens quickly
, then add milk to it. Add milk little by little checking if you make roll them
into balls after each addition.
