Gardudhe Halwo (Dudhi Ka Halwa)



My craving for sweets is still going strong. Hence I am always on the lookout for desserts, halwas and barfis. Maybe it is appropriate given the festive mood.  When I went to the market last week, I saw lots of dudhis (bottle gourd) being sold.  I wasn’t sure about the dishes one can prepare with this vegetable. In fact I did not know what its Konkani name was.  I still bought it hoping to figure it out later. When I checked with my mom and mom –in – law, they told me it is called ‘gardudhe’ and suggested that I make halwa out of it. That’s exactly what I needed, given the sweet mood I am in these days.

Dudhi Halwa is made in much the same way as carrot halwa.  It is easy to make and very good for health. Dudhi is low in fat and cholesterol and high in fiber.  It has 95% water content on account of which it has a very cooling effect on the body.  Dudhi juice also helps in curing urinary infection, indigestions and ulcers. Ingredients
Dudhi - 2 cups grated
Milk – 3 cups
Sugar – 1 cup
Cardamom – 3 pods crushed
Ghee – 1 tbsp
Mawa – 1 tbsp
Cashwenuts – crushed (optional)


Method
1.       Heat ghee in a wok and add the grated dudhi.  Fry it till the all the water dries out.
2.       Now add milk and sugar. Let it cook.
3.       Keep stirring every 2 minutes and check if dudhi is cooked.
4.       Let all mixture thicken (It should become semi dry).
5.       Now add Mawa and cardamom. Mix well.
6.       Lightly fry the Cashwenuts and add to the halwa.
7.       Serve hot or chilled as desired.
