Kaarate Kismuri( Bitter Gourd with Spicy Coconut Masala) – Type 1


Bitter Gourd or ‘Karela’ (kaarate in Konkani) is the most disliked vegetable on account of its bitter taste. Very few people would probably be fond of this vegetable.  I am not a big fan of bitter gourd. However, when it is prepared with spicy coconut masala, I savor it. When cooked in this way, the bitter taste does not disappear.  It just tastes different and better.



Ingredients
Karela – 2
Coconut – ½
Coriander Seeds – 1 ½ tsp
Jeera – 1 tsp
Mustard Seeds – ½ tsp
Dried red chillies- 4
Green chilli - 2
Onion – 1 medium sized. 
Method
1.       Chopped the Karela very finely

2.       In a pan, heat oil and add the finely chopped karela. Fry this till its really brown and crispy. Keep this in a air tight container.
3.       Grate half a coconut.
4.       To this add the spices and green chilies.
5.       Fry the red chilies in oil and add to the above mixture.
6.       Add some water ,salt to taste and grind to a smooth paste.
7.       Now finely chop onion.
8.       While serving mix the masala paste ,the crispy karela and onion 
Karela,Masala and Onion
 Note:   Do not mix the karela ,masala and onion and keep.While serving add a spoonful of each on the   plate and eat it
